Daiya Cheese: You’d think they’d be giving me free stuff by now.
So it’s been a few weeks since Daiya cheese has been available for purchase online and I’ve already talked at length about how much I love it. While I never really missed cheese (except for goat cheese), ever since I got the stuff I’ve just been looking for things to put it in or on. Aside from the standard pizza, here are some other things I’ve made:

Look at how fucking melty it is! Daiya definitely melts better when it’s in something like a sandwich or quesadilla. I used to eat quesadillas like there was no tomorrow. Thanks to Trader Joe’s Chickenless Chicken (AKA Gardein), some cheddar Daiya and some Toffuti sour cream, it’s just like old times!

flaky scones... mmmm!
I’ve only made scones once prior to this and they ended up like soggy rocks. How something can be soggy and hard at the same time, I don’t know, but that was before I knew anything about baking. These were buttery and flaky and delicious. I only put 1/2c of Daiya in and the flavor was there, but I think next time I’ll double the amount. The recipe I used as a base for the scones only made 6 and they lasted about 5 hours.

I never put cheese on reubens I’ve made at home until now. The mozzarella Daiya added an awesome flavor and an extra creaminess to the party. Now I have to have this stuff on hand at all times!
I’ve been making some other things: grilled cheese (cheddar – tastes just like I remember it: AWESOME), philly “cheesesteaks” (TJ’s beefless beef strips + onions + mozzarella daiya)… I’m totally trying to think of new ways to use it. I don’t know what it is about things like a new vegan cheese but I suddenly feel the need to use it in every thing possible, not because I missed cheese, just because I can.

Daiya should totally be giving all of us free stuff!
I made an amazing cheddar Daiya quesadilla (plain and dipped in a verde sauce, no faux chicken or sour cream) over the weekend and wow, it was great! Quesadillas were my mom’s version of comfort food for us while we were growing up and I didn’t realize that I’d missed them until I had one with Daiya. I’m looking forward to another one soon.
So I have a question.
I normally use FYH’s cheese, with pretty successful melting results, and the upside to FYH is it can be shredded and frozen until the next use of it, so it doesn’t go bad.
Will Daiya freeze? This stuff is making me CRAZY with the want to try it, but I’ll be sad if I can’t eat it fast enough before it goes rotten!
I inadvertently left some shredded Daiya cheese in a garage in Oregon for over a month. It was late fall early winter so it stayed fairly cool but when I got back to Portland the cheese looked and tasted fine. Not sure exactly what they make it out of, but it doesn’t spoil quickly, or dry out in shredded form for that matter.
I actually haven’t tried to freeze it. But I bought several bags at once and only one started to grow a little mold – I’m thinking it was left over from Pangea’s first supply (it was the cheddar flavor). All of the other ones have been sitting in my fridge and they’re A-OK.
Mmmm, sounds promising. Sooo splurging and buying one of each flavour, then.

I’ve had the cheese on a pizza from Cruzer Pizza in Los Angeles and it was outstanding. Can’t wait to have it again. I ordered the cheese from Pangea in their cold pack, but it arrived warm and I was concerned about whether it had spoiled. I called Pangea and they said I shouldn’t eat it if it wasn’t chilled on arrival, so I disposed of it. I live in the desert (La Quinta, CA) and it’s pretty hot out here. I guess I’ll have to wait until the Fall to order again. We need a supplier in Southern California, having to ship from the East Coast is crazy! Any ideas?

Anytime I’ve ordered Daiya, it was not chilled when I received it. I’ve eaten it several times and given it to other people, no one has had any issues. I did order a cold pack, but would do ground (5-7 day) shipping. Of course we’ve had a lot of gray days thanks to June gloom, I could see your hesitation if it was hotter. But, really, it’s vegan – it’ll take a lot longer to spoil.
I’m so hungry right now and everything in this post is calling to me! I wish I had those scones…
Could anyone please tell me where you can buy this cheese? I have been hunting for it online and have yet to find it!!! It sounds SO delicious, and those pictures were making my mouth water just from looking at them lol. It seems like so many vegan-friendly cheeses on the market are just blah-tasting, and don’t melt the way this one does. Please share the secret on where to find this ooey-gooey awesomeness! =)

Every vegan blog I read has something about this Daiya cheese – it must be the dairy free miracle cheese – I must try it, well now that I’ve seen your delicious looking quesadillas.

I tried daiya cheese for the first time today. I purchased both flavors, italian and cheddar. They melted like cheese, which was amazing. I liked the cheddar better because it had a stronger flavor. I’m sure if I didn’t eat real cheese for five years and then had daiya, I would think it tasted pretty darn close to real cheese. However, I am not a vegan and eat real cheese all of the time, so I was disappointed by how unlike cheese it tasted. But that doesn’t mean it tasted bad, it just tasted like “not cheese.” I’d eat it again, but I’d definitely have to tell myself that the quesadilla I’m eating is really a “something else dilla.” All in all, it wasn’t terrible, but it wasn’t cheese.
